The first bar from Globally acclaimed bartender Kelsey Ramage has opened at Bay & Adelaide with a focus on fresh, bubbly drinks that champion Ontario produce.
The magical ringleader of Supernova Ballroom, BC raised Kelsey has been calling Toronto home for the last 18 months though it was also where she first cut her teeth in hospitality & got the itch for it. Since then she has travelled the world & become a recognised leader, co-founding our parent company The Trash Collective & it's anti waste drinks platform Trash Tiki
With a big focus on light, refreshing & flavourful cocktails as well as small plates that also follow the same ethos to ethical sourcing & sustainable farming, our aim is to be refreshing disco filled oasis of good times with quality drinks
Tucked away in the middle of Toronto’s bustling Financial District, Supernova Ballroom has taken up residence in one of the city’s most stunning & unique spaces
Designed & completed in 1926, the 330 Bay St location is the by Chapman & Oxley a firm that contributed over 20 buildings to the downtown landscape during it’s time in business, including the Maple Leaf Stadium & Royal Ontario Museum
Taking hint from early era, funk laden Disco, the interior is burst of colour and flowing shapes that compliment the flow of the room, drawing the eye to key features such tiered chandeliers & stunning 20’ gothic arch windows
Our menus change quite regularly. More than just seasonal, when we bring in fresh produce from Ontario farmers, we look towards the best way we can capture and preserve its flavour. As an example, this means that if you see things like stone fruit on our menu in the dead of winter, it won’t be some confected off the shelf liqueur, but rather a house made product we’ve been labouring over for months that is now ready to serve.
Our food of course follows in the same ethos, offering a range of small plates with kitsch 80’s flair that can feed 2-3 people when ordering the whole menu

We’re a cocktail bar with small plates that has a real love of light, fresh drinks paired with disco in gorgeous surroundings. We put a focus on Ontario produce, sustainable food waste practises & creating a space that is safe & welcoming to all
Monday to Wednesday: 4pm to Midnight
Thursday to Saturday: 4pm to 1am
4pm to 10pm daily
